Recipe Summary Mexican Raviolis
A fantastic way to celebrate Cinco de Mayo! This was a last minute creation using ingredients found in my fridge. Serve with marinara sauce (add chopped cilantro to the marinara for a bit of Mexican flavor). If you can't find Mexican cheese, try a mix of Monterey Jack and Cheddar.Ingredients | The Ravioli Shop2 links chorizo sausage, cut into small pieces½ cup part-skim ricotta cheese1 cup shredded queso asadero (white Mexican cheese)½ cup chopped cilantro1 clove garlic, finely minced½ teaspoon cumin1 teaspoon salt1 (14 ounce) package round wonton wrappers1 teaspoon olive oil1 tablespoon saltDirectionsAdd chorizo to a hot skillet set over medium heat; cook, stirring, until cooked through.
